Great cornbread starts with the cornmeal. Cornmeal is readily available in two colors, yellow and white and can sometimes be purchased in blue. Yellow cornmeal is a good source of vitamin A while white is not. Both can be purchased in either a coarse or fine grind.

Degerminated cornmeal has the germ and usually the bran removed. Without the fatty germ, degerminated cornmeal keeps longer. But old-process cornmeal, cornmeal with the germ included, has a superior flavor and more food value. This whole cornmeal is hard to find in most grocery stores but is produced locally from old-style grist mills in some areas of the country. When you find it, pick it up-it will make superior cornbread. Keep it in the refrigerator until you use it.
