CIA's Professional Chef
I just got this today.....8th Edition.

What a great resource book! One of those books you want to sit down and read through, cover to cover....which will be quite a feat; it's quite big and thick :)

From quickly perusing it, I noticed that (unfortunately) most of the [fantastic] recipes are scaled to a professional kitchen's size; Gourmet-BBQ sauces that make 3 quarts....stuff like that. Easy to pare those down to a household size, but not the baking...

Great book, though!


Tip:
Kukla, I have the same book as many other professional ones. I will sit with a calculator and re scale them.
