Each chapter is written by a professional in the field that the chapter is about...for example: Sauces & Dressings is by Paul Gayler; Fish & Shellfish is by Charlie Trotter; Mexican Cooking is by Rick Bayless; and we also have chapters by: Michael Romano, Marcus Wareing, Shaun Hill, David Thompson, Pierre Herme...
The list goes on and on! And, the best part is that the recipes, instructions, and step-by-step pictures have been geared down for the home kitchen (unlike the CIA's Profession Chef book...)
All foodies would like to know how to make SOME things well and still maintain a general knowledge of how to make other things. This is the book that will get you there, or hone your skills if you're already there but need a quick brush-up.
Worth buying for sure. I originally saw it at my local library, and ended up buying a copy!
