How much turkey should I buy?

I will second what you say with this caveat: I have kept turkeys for a year several times. I usually stock up after Thanksgiving time when they are on sale, and usually clean out the last one at Thanksgiving--though sometimes we don't make it that long. Usually it is pretty good, but definitely not as good as a fresh one by then. The fat is often starting to get a little rancid so I would carefully trim it ALL off. Occasionally the skin is starting to get rancid too, but probably I got a turkey that was already "aged" too long in the producer's or store's freezer and I just happened to purchase the old turkey.
I'm not saying you're wrong on how long you can keep them. Just SOMETIMES keeping one that long results in a less than ideal product. I wouldn't count on a turkey that old if I were having company unless I were doing some heavy-duty marinating or I checked it for freshness several days ahead.
