(Don't rest bulb of thermometer on bottom of saucepan!) Remove from heat. Add butter and vanilla. DO NOT STIR. Cool at room temperature until lukewarm (110 degrees). Beat with wooden spoon until fudge thickens and just begins to lose some of its gloss. Quickly spread into prepared pan; cool completely and cut into squares. For variations: Add walnuts, pecans, hazelnuts, etc. Also, try leaving out the cocoa for a rich delicious 'Blonde Fudge', it's fabulous. The 'Blonde Fudge' is actually my favorite. I'm not sure about the prep and cook time; so please don't hold that against me. It may take more or less time, depending on your altitude and stove settings.
