Risottos staying power
Does risotto have to be made at the last minute? Is there a way to make risotto and store for a customer for the customer to reheat and it still be as creamy as it was when served fresh?

Yes, I found in 1000 Best Recipes book, as of yesterday, that risotto does not have to be eaten in the same usual way but can also be made like crab cake or a corn fritter. I haven't tasted this yet but it does look interesting.

I hope someone could use this information.
