I would maintain the cream and leave out some mild....more flavor in the cream. The buttermilk. chicken bouilon and garlic are essential to the recipe....they give the stew a great taste that folks love. You can always add whatever veggies you like in a stew, simply saute' them first for tenderness.

You will have to make a gravy seperately from the potatoes. The color will depend on just how you make the gravy. If you season the potatoes with chicken bouilon, you will want a chicken gravy. Chicken gravy is typically lighter that a beef gravy, for example.
Start with 2-4 tablespoons butter, melt in heavy skillet (a lightweight skillet will burn the gravy) over medium heat, or mix butter and olive oil to avoid scorching the butter. Add 2 tablespoons flour, salt and pepper to taste and stir stir stir until smooth to make a roue.....after that the longer you stir, the darker the roue and the gravy. Add 1 cup chichen broth to the flour mixture and bring to a boil. After boilng 1-2 minutes reduce to simmer, and serve hot. A great easy gravy that can be as dark (or light) as you wish.
