To begin with I will mention Japanese Women Don't Get Old or Fat, Secrets from my Mothers Tokyo Kitchen, by Moriyama. I hope you wouldn't let the name stop you from checking it out, she really breaks everything down step by step.. And there are some amazing recipes in there and no it's not all about Sushi. Perfect for the beginning Japanese cook, or for anyone interested in learning a little about a different culture and way of eating.
My second would be Washoku, Recipes From the Japanese Home Kitchen. There are 308 pages of recipes and beautiful pictures. The author Elizabeth Andoh has a website has a website where you can go to learn more about herself, its called www.tasteofculture.com
My third of course has to be Japanese Cooking: A simiple Art by Shizuo Tsuji and a lot like my first recommendation, there are lessons presenting the basic cooking methods and principle types of prepared foods.Not only that there are over 220 recipes to pick from. There is one recipe in here I'm dying to make called Steamed Salmon Casserole (chiri-mushi) and since salmon season is coming here in a few weeks or less I will get my chance.
My fourth is Japanese Family-Style Recipes, by Hiroko Urakami.. These are traditional Japanese recipes.
One I would like to read or buy is called Bento Boxes: Japanese Meals on the Go by Naomi Kijima. I have a feeling it would grow to be one of my favorites.
So these are the ones I've read, any other recommendations? so we can finish this top 10?
