Having: Grilled Jumbo Shrimp Over Veggies with Citrus Vinagrette (posted), some cheese tortellini salad (have a few ideas for a recipe rolling around in my mind - lol) and bread on on the side. Think I will go down the the fruit market and see what I can find to go with some pound cake for dessert.

I have a huge roaster chicken I made up last night (the second in one week - do recall that the dog got the last carcass) - lots of meat left on this bird- besides your basic chicken tettrazini casserole- Does anyone have a good idea of something I can do?
I have handy marinated sun-dried tomatoes, fresh broccoli, cheeses including ricotta and mozzarella among a goat cheese provolone and all the normal staples - I am game to try anything new...and am walking distance to a local grocery store.

I thought hubby would complain about it being too healthy, but he loved it. It was light, fresh, easy and perfect for a casual dinner. I've also diced it and made a traditional chicken salad with onion, celery, mayo, S&P. Again, easy and good for lunch the following day.
