Newbie GF question: Cider vinegar
I've seen celiac sites and GF blogs using cider vinegar in some bread recipes. But I don't see an explanation on why they're using cider vinegar.

Q: Is it totally necessary?

Q: Does it have to be cider vinegar, or can distilled be used in its place?

you have asked some very good questions...

vinegar is used in bread baking because it contains ascorbic acid... this help improve the texture and the shelf life of the breads..

I don't think it makes any difference in whether you use distilled or cider vinegar accept maybe a little flavor...

you can also use a product called Dough Enhancer... this contains ascorbic acid, and a few other ingredients that helps our type of bread.... but either is fine to use..

i believe it is there to counter the gf taste that occurs with flours, to even it out more...

Thanks peetabear and lollya. Right now I only have distilled and malt (and I'm betting I shouldn't have malt).
