Books and Resources
I have recently gotten the Bread Bible by Rose Levy Berenbaum and I find it super useful. I have tried three recipes so far: flax bread, 10 grain and olive and all have succeeded. Does anyone have any other good books or resources to recommend ?

I just recently started making my own bread. It has become a bit of a passion of late. It is worlds better than the store-bought stuff.

I am looking for bread books, and will certainly give the Bread Bible a try. Does it have a lot of wheat recipes?

Alton Brown wrote a baking book called "I'm Just Here for More Food: Food x Mixing + Heat = Baking" which is quite thorough and a very good book.


Tassajara Bread Book
The Tassajara Bread Book is the original in traditional style baking. I have made a lot of the recipes in this book - and every one is great and the instructions are very clear as well.

whole grain bread books
The new king arthur whole grain book has lots of yummy bread recipes. I haven't made any of the yeasted breads yet; but I have made a number of different recipes and I've been happy with all of them. My husband uses Bread Alone by danial leader. The recipes are mostly for refined flour and they take time, but the bread is fantastic. The Tassajara bread book that 10gallonhat mentioned is good as well. I haven't used it in a while, but I think it has plenty of whole wheat recipes.

For those of you who are interested in using primarily whole grain flours, I highly recommend Laurel's Bread Book. It has been a faithful companion to me as I've had to take it out of the library a few times. The basic bread recipe is excellent for anyone just getting started.

Unfortunately, due to time restraints, I now use a bread machine, but learning how to bake a loaf of whole wheat bread by hand is a very fulfilling experience. (At least, it was for me!)

I absolutely LOVE "The Bread Baker's Apprentice" by Peter Reinhart. The first section of the book (about 100 pages) is nothing but information about bread baking. I learned so much from this section! And the recipes are incredible! They do take time so this isn't a book for those who want to bake bread quickly. Most recipes have you make a starter the day before then make the bread the next day. But it's oh-so worth it!!

crumbling crust
Hi all,
I'm new to baking and wonder why bubbles form just under the crust so when sliced, the top falls off. Otherwise, the overall texture and taste is great.

I'd appreciate any tips.

A favorite bread cookbook that I love is The Bread Machine Cookbook by Donna Rathmell German. Not only are the recipes unusual but every single one that I have made has come out perfectly. Book came out in 1991 so it might not be too difficult to find.

I love making breads by hand, but don't always have lots of time. One of my all time favorite bread books is Rustic European Breads from your bread machine, by Linda West Eckhardt and Diana Collingwood Butts.

The idea is that you make the doughs in your machine, then you form them into rustic loaves by hand and bake in your oven. It covers making and using starters, too. I've made delicious french breads and ciabattas, amazing crusty rolls, etc.

Great Breads
Great Breads by Martha Rose Shulman.
My son bought me this book 12 years ago when I first started making bread(without a bread machine).
I learned so much for this book.I recommend it to anyone who wants to know about bread making and it has great recipe. I have been looking for something similar for the bread machine. I bought and was given lots of bread machine books but never found one that inspired me like that one.
