I started my herbs from seeds by putting them in between wet tissue paper. Right now all I have is Parsley, Basil and Sage. I would like to grow Rosemary and Chives next.

Chives are a good option because they're fairly hardy, basil can be tempermental, mint can last through just about anything (and is easy to make more of! Just cut off a bit that has at least one node and stick it in moist dirt.). I would recommend figuring out which herb you would use the most and planting that. If the pot is big enough you could always have a few in one pot!
Some problems you will face with growing anything indoors are air circulation and light requirements. I've heard a lot of recommendations about having a few pots that you rotate through.
They sell special light bulbs for plants, probably as grow lights or something similar. Having a grow light mounted under your cabinets sounds like an awesome idea! You just have to be careful about them getting too hot, right?

Yes, you can put multiple herbs in one pot, but don't do so mints. Because they're so hardy, they end up taking over the whole pot.

I have also started 4 tomato plants (patio princesses) indoors about 2 months ago and they are also now outside. I really think you can grow anything in pots (basically) you just have to do a lot of research. A good book to start with might be Crops in Pots by Bob Purnell. I was looking through Burpees catalog and they even have carrots that are perfect for pots, called Thumbelina's.
Suzy, I have tried three times to start rosemary- right now i'm on my fourth using a different method ( I have been using the tissue method) I will let you know how this goes. Out of all the herbs I've grown this one has been giving me the hardest time- in fact none of the others have given me any problems!
