I use a packaged mole poblano from Dona Chonita. It is really quite tasty.
Making mole from scratch is an incredible amount of work. There are several recipes on this site for it. Here's one http://www.grouprecipes.com/53320/mole.html
I have used the packaged one in 2 ways. I saute the chicken in a little garlic, onion and olive oil and then add either some chicken broth (less than 1/2 cup) and mole or add plain tomato sauce and mole then let it reduce to a thickness that I like.
