Shrimp Red Curry
2 Tbs of jarred Red Curry
2 cans of light coconut milk
2 tsp of fish sauce
5 Tbs of brown sugar
3 Tbs of lime juice
1 zuccini
1 yellow squash
1 red bell pepper
1 pound of shrimp

heat your coconut milk on med high heat with your red curry until blended, stirring. When blended add next three ingredients. Simmer for 5 minutes. Slice zuccini, squash, and red bell pepper and simmer until vegetables are soft, but not mushy.. about 15-20 minutes. Add shrimp and cook for 5 min. Serve over rice.
