One of my roast "recipes"
I don't normally write this sort of thing down. I just do it.
This is one of my ways of making a roast, that will lead to a Hot Roast Beef Sandwich.


Chuck roast continued...
IF you want this roast seasoned differently, do it the way you like.
My preferred seasonings are more beef flavor, a bit of pepper and maybe a dash of onion flakes or powder and just a bit of garlic powder. My salt more than comes from the soup mix and or canned beef broth.
When the roast is tender to your liking and the veggies are also tender, serve up.
I normally use just broth for this meal.
Any leftovers can be turned into HRB sandwiches for another meal.
IF you want to make the whole roast into HRB...
When the roast is to the desired tenderness (I like mine starting to fall apart.) remove the roast to a platter and add more water or canned beef broth to the pot(two cans total for the entire roast) and bring to a boil.
I use flour and water to thicken the broth.
OK, I just do it, don't measure...Put flour and water into a sealed container, like a jar, and shake. Make extra as you can always throw it away The end result should not be a paste, but more watery, easy to pour.
I turn the broth off...period. I've found that it's hard to make this gravy when the liquid is still cooking. Stirring constantly, pour in small amounts of the flour and water. Don't add all at once, as you might get this too thick. You'll know when your are getting to the right thinkness for you. Before this point, turn the heat back on and allow the gravy to simmer. This will probably get you to the right thickness.
IF you get it too thick, add just a bit of water at a time until you get it thin enough.
Use this gravy with your veggies or as the gravy for your HRB.


Mashed Potatoes
Potatoes
Season to taste
Butter
Milk or Cream

I like fresh potatoes. You can use instant if you want but it's just not the same.
I will just tell you, cook the desired amount of the potatoes you like, drain well when they are tender.
Add the amount of butter that is good for you. Mash the potatoes.
Add milk or cream, your preference.
I add just enough to be able to stir the potatoes, not have them thin.
(My MIL made them thin. I don't care for that at all.)
I like the mashed potatoes to have some body, more stiff, to make a well for the gravy on the plate.


Green Beans
I think it's a sin NOT to have green beans with this meal....
I use mostly canned.
I just add some onion flakes to the beans as they are simmering.
Also, crumbled bacon, if desired. (I quit using bacon grease a long time ago, but that would also be good.)
Simmer all of this together until the beans are HOT.
Serve with the HRB.


Putting this together...
Put two slices of bread (most will use white, I use whole wheat) on a large plate.
Put the very tender roast beef on the bread.
Add mashed potatoes to the side. Make a well in the potatoes.
Cover the meat, bread and potatoes with gravy.
HRB sandwich....
Add green beans to the side for HRB dinner.

The basics are...
tender roast beef
good beef gravy
mashed potatoes your way
bread to sop up extra gravy.
Serve it.
You can even use packaged dry gravy mix if you can't make gravy.
It's up to you, whatever YOU are capable of making.
It can be quicker and easier or it can take quite a while.

going to do this with a sirloin or rump, have it rare on sunday for fathers day, then HRBS on Monday... Will redo the left overs in the gravy....

Kristopher had a good idea on this... tossing out recipes.... I have gotten 3 new ones just today!

I never throw a recipe away. You have no idea!
