I'm thinking of making juice, as there are a lot there. Busy, very busy.

As soon as I can afford it, I'm buying a pressure canner so I can can everything. All I have now is a makeshift water boil canner using the stock pot as a vessel. When I made my first batch of jelly I didn't understand that the jar had to be completely submerged in the water. Didn't kill anybody though.

I normally just use the basic Ball canning book but when I ran across this Ball book, I had to have it. This one has 400 recipes of all sorts. I've found some really good jam and preserves recipes that i just have to try. My plum jam recipe came from this book and turned out quite well. I've found so many good sounding recipes that I can't decide which to use. I especially want to try the carrot cake jam recipe, which sounds delicious and has promises of tasting just like the cake. I'm drooling over it, so it's on my list of to-dos. Will post results when I've tried another recipe.
