Corn Bread
I often make an 8x8 corn bread from scratch and since it is usually just the two of us...after a few days I do two things with the old corn bread.
I cut it up into cubes and dry out one more day, then freeze for corn bread stuffing starters - which then I just add the herbs I want.

For those pieces, chunks and crumbs that weren't shaped into cubes, I gather them, dry those as well, then freeze for use as breading on top of casseroles such as mac n cheese, chicken tetrazinni and the like.
