Cookie doughs that are formed into balls and logs:
Rolled or dropped balls can be placed close together on a parchment-lined baking sheet or flexible cutting board that will fit in the freezer. Briefly freeze the individual balls until they are firm enough to not stick together, then layer the frozen dough balls between sheets of parchment in an airtight, freezer-worthy container.
Roll logs of cookie dough in parchment paper and then tuck the paper under at both the ends. Wrap the parchment package well in plastic wrap. Place the wrapped log in an empty cardboard/paper towel tube right before freezing, and the log will freeze firm with rounded edges instead of having one flattened, bottom side.
Most importantly: Label, label, label. Indicate cookie type, date and number of cookies (if applicable).
