Sprinkle with cheddar and mozzarella and cover. Lower heat and cook for 5 minutes. Serve either in a bowl or soft tortilla wrap. Top with tortilla chips, tomatoes, lettuce, sour cream and salsa.
This recipe is a big hit with the kids! Both our boys love tacos and I find that this method is not as messy as the traditional tacos.
I've also added diced sweet red, green and yellow peppers with the tomatoes and lettuce. It adds colour and crunch.
