Bulgur Meatloaf Recipe
This dish is protein and carb combined, so just add some veggies. I like with herbed, diced tomatoes on top with some steamed or roasted asparagus on the side. YUM!

Ingredients
  • 1 cup bulgur (dry)
  • 1 cup boiling water
  • 1/2 cup chopped onions
  • 3 tsp minced garlic
  • 2 lbs extra lean ground beef (or ground sirloin)
  • 1 1/2 cup grated carrots
  • 1 tbsp ground flax
  • 3 egg whites
  • 1 1/2 tbsp ground oregano
  • 1/2 tsp salt
  • 1 tsp black pepper
  • 1/2 tsp crushed red pepper flakes

Directions
  1. Preheat oven to 375 F. Combine bulgur and boiling water and let sit while assembling the rest of the ingredients. Mix remaining ingredients in a large bowl. Drain bulgur and squeeze dry.
  2. Add to the bowl. Shape into loaf in a baking pan and bake for about 60 minutes or until juices run clear. May need 2 pans. (I have an extra long loaf pan I used) Let stand for about 10 minutes to set.
  3. Serves 12
