Cream Of Pumpkin Soup Recipe

Ingredients
  • 1 (15 oz.can of pkin puree
  • 1 c. of chopped onion
  • 3 tbsp. of margarine, softened
  • 1 tbsp. of brown sugar
  • 1/4 tsp. of ground cinnamon
  • 4 slices of whole wheat bread
  • 2 (14.5 oz.) cans of chicken broth
  • 1 tsp. of salt
  • 1/4 tsp. of ground cinnamon
  • 1/8 tsp. of ground ginger
  • 1/8 tsp ground black pepper
  • 1 c. of heavy whipping cream

Directions
  1. First preheat 400 degrees.
  2. Next add the butter, bown sugar, and cinamon.
  3. You want spread butter over each bead slice.
  4. Now butter side up, put bread on baking sheet in the over for about 10 min. letting bread get crisp.
  5. Next cut each slice in small triangles.
  6. Then you want to saute onion in butter over medium flame.
  7. From here you can cdd in broth, letting this stir.
  8. Let this come to a boil, and let this simmer about 15 min.
  9. Now you want to puree the mixture in a blender until creamy.
  10. Then you can add creamy blend back into the pan adding last can of broth, pumpkin, salt, cinnamon, ginger, and pepper.
  11. Let this stir well, coming to a boil.
  12. Lower flame to low and cook approx. 10 min.
  13. Finally, add in whipping cream and heat.
  14. Ladle in m y bowls and serve!
