Ingredients
  • 4 boneless, skinless chicken breasts
  • 1 T vegetable oil
  • red curry paste
  • 1 can coconut milk

Directions
  1. Cut the chicken into 1 inch cubes.
  2. Saute in oil until chicken turns white.
  3. Mix in red curry paste; cook for a couple of minutes.
  4. Mix in coconut milk.
  5. Simmer for 5 minutes.
  6. Serve with rice.

Alterations


I make mine pretty much the same way but I add 1/2 tsp of cardamom, 1tbsp lemongrass, from the tube and about 2 tbsp brown sugar. This sweetens it up and makes it more "thai restaurant" ish.
