Ingredients
  • 4 boneless skinless chicken breasts
  • 1 T vegetable oil
  • red curry paste
  • 1 can coconut milk
  • Rice

Directions
  1. Cut chicken into 1 inch cubes.
  2. Saute in oil until chicken turns white.
  3. Mix in red curry paste; cook for a couple of minutes
  4. Add coconut milk.
  5. Simmer for 5 minutes.
  6. Serve on rice.
