Zucchini Stew Recipe
This makes a wonderful recipe for when you are having a large crowd.

Ingredients
  • 2 diced zucchini
  • 1 chopped onion
  • 2 c. of uncooked white rice
  • 3 lb. of ground beef
  • salt and pepper to taste

Directions
  1. First you want to add zucchini and onion to a pot.
  2. Next you want to cover with about 3 in of water.
  3. Then let this come to a boil over medium flame.
  4. Pour in the tomatoes and rice.
  5. You want to reduce the flame to low.
  6. Next in a large pan, cook the beed over medium flame until done.
  7. You will pour this into the soup, adding water if needed.
  8. Season with salt and pepper, letting this cook on low for approx. 20 min.
  9. Ladle and serve!

You don't list tomatoes in the ingredients, only in the directions. I'd like to know the amount. Thanks:)


The recipe mentions adding tomatoes with the rice but I see no tomatoes mentioned in the recipe. Otherwise, it sounds good.

Alterations


I made this tonight. I added a can of chicken broth to the beginning water, onions and zucchini.
I used 2 lbs. of hamb., and 3/4 cup of rice. I peeled and chopped 2 1/2 large tomatoes. I also added 1 tsp. oregeno, and 1/2 tsp. of garlic powder. I think it would be good with green pepper too, but I didn't. It was very good.
