Ingredients

1 large brown onion

2 large garlic cloves, minced.

Olive oil

Minced beef or lamb

ground cumin

ground corriander

the juice of one lemon (essencial to enhance flavour)

Paprika

Salt and pepper to taste

Silver beet leaves

Firm yet crumbly feta cheese

10 large tortillas

Directions

Saute diced onion and garlic in olive oil over low heat in frying pan until just transluecent

Add minced beef of lamb and cook until brown, making sure to break it up a lot. Lumps will make assembly a little harder. Add spices and salt and pepper. Once the mince is brown, squeeze in lemon juice. The juice is what makes it so special!! I havent included measurments of spices, because its good to taste and adjust according to ur tastes :) Allow mixture to cool.

Mean while chop up silver beet leaves and crumble feta. (You can combine the 2 to make assembly easier)

Heat a non stick fry pan on a low heat without oil. Put in tortilla flat. Spoon in cooled mince mixture like u would a pizza to just cover the surface. Top with silverbeet and feta mixture. Put other tortilla on top and heat thru to cook the tortilla a little and to heat thru the mince. Make sure you do this on a low heat or you'll burn the tortilla before the filling is heated. Flip the entire thing.. can be tricky. heat other side

Cut into 6 and serve as wedges. Nice served with lemon wedges ;)
