Ingredients
  • 3 fresh farm eggs
  • 2 cups heavy cream
  • 1/2 teaspoon nutmeg
  • salt
  • pepper
  • herbs de provence (optional)
  • 1/2 medium onion, chopped
  • 1 shallot, chopped
  • 2 cloves garlic, minced
  • 1 1/2 cup shredded swiss cheese
  • 1/2 cup feta cheese, crumbled
  • 1/2 stick of salted butter
  • 1 pre-made refridgerated deep dish pie crust

Directions
  1. Preheat oven to 350 degrees.
  2. Melt 2 tablespoons of butter in a saute pan.
  3. Add chopped onions and shallots.
  4. After about 3 minutes, add garlic and cook until everything is soft and fragrant.
  5. Remove from heat and set aside.
  6. Mix eggs and cream in a large bowl.
  7. Add nutmeg, salt and pepper to taste.
  8. Add herbs de provence if using.
  9. Add cheeses.
  10. Pour into pie crust.
  11. Dot top wiith butter.
  12. Bake for about 25-35 minutes until golden brown on top.
