Strawberries have been my favorite food since childhood. They are sweet, juicy, ready-to-eat deliciousness that make the perfect dessert: strawberry shortcake.

Ingredients
  • 8 oz. strawberries, chopped
  • 1 cup + 1 tablespoon sugar
  • 1 tablespoon lemon juice
  • 2 cups flour
  • 4 tsp. baking powder
  • 2 tablespoons butter
  • 2 tablespoons shortening
  • 3/4 cup half and half
  • 1 pint (2 cups) heavy whipping cream

Directions
  1. Preheat oven to 450 degrees.
  2. In a large bowl, mix together the chopped strawberries, lemon juice and 1/2 cup sugar.
  3. Lightly mash the strawberry mixture with a fork until juicy.
  4. Cover and place in fridge.
  5. In a large mixing bowl, combine flour, baking powder and 1 tablespoon of sugar.
  6. Cut in butter and shortening, then mix in half-and-half.
  7. Drop by large spoonfuls onto a baking sheet.
  8. Bake for 15 minutes or until golden brown.
  9. In a medium bowl, whip the heavy cream and 1/2 cup sugar with a hand mixer until it forms peaks.
  10. Take a shortcake and slice it in half.
  11. Add a layer of strawberries, then a layer of whipped cream.
  12. Top with other half of shortcake, another layer of strawberries and end with a dollop of whipped cream.
