It started as an inventive lunch experiment and ended in YUM! If you love veggies, cheese, and bread fried in olive oil, then this is for you!

Ingredients
  • 4 slices of grain bread
  • grated monterey jack cheese (or of your choosing)
  • olive oil
  • 1 yellow pepper, sliced
  • 1 avocado, sliced
  • 1 tomato, sliced
  • fresh ground pepper
  • For Side:
  • chopped spinach
  • juice of 1/2 lemon
  • garlic (as much as you want!)

Directions
  1. Start the side first:
  2. cook chopped spinach in pan with a little water
  3. add garlic and lemon when your almost done making the sandwich below
  4. heat skillet with a layer of olive oil
  5. place bread in skillet
  6. pour some oil on the bread face up (more olive oil = richer and crispier bread)
  7. grate a thin layer of cheese on bread and let melt
  8. array tomato, yellow pepper, and avocado on bread
  9. season with black pepper
  10. eat as open-faced sandwich with side (let the juices mix!)
  11. delicious.
