Deliciously Balanced Brussels with Lemon and Bacon

- 1.5 pounds Brussels sprouts, cleaned and halved lengthwise shopping list
- 4 slices thick-cut bacon, roughly chopped. shopping list
- 1/2 cup sliced almonds shopping list
- 4 cloves garlic, minced shopping list
- juice of 1/2 lemon shopping list
- salt and pepper to taste shopping list
- optional tsp. red pepper flakes shopping list
How to make it
- heat a large skillet to medium heat
- add dry almonds and toast for 3 minutes or until opaque and slightly golden
- place toasted almonds to the side and add bacon, cooking till crisp
- remove bacon and add Brussels sprouts to pan (don't drain oil as it will be easily and quickly absorbed by the very dry sprouts.)
- (optional: this is a good time to add the red pepper.)
- Add salt and pepper and cover with a heavy lid just smaller than your pan. The pressure will help carmelize the sprouts.
- Cook for about 15 minutes, stirring occasionally.
- Add garlic and lemon juice after about 10 minutes. Salt and pepper to taste.
- Serve and enjoy.
