Deliciously Balanced Brussels With Lemon And Bacon Recipe
This is a simple preparation of a highly maligned though beautiful vegetable that will help old naysayers rediscover how versatile and delicious Brussels Sprouts are.

Ingredients
  • 1.5 pounds Brussels Sprouts, cleaned and halved lengthwise
  • 4 slices thick-cut bacon, roughly chopped.
  • 1/2 cup sliced almonds
  • 4 cloves garlic, minced
  • juice of 1/2 lemon
  • Salt and pepper to taste
  • optional tsp. red pepper flakes

Directions
  1. heat a large skillet to medium heat
  2. add dry almonds and toast for 3 minutes or until opaque and slightly golden
  3. place toasted almonds to the side and add bacon, cooking till crisp
  4. remove bacon and add Brussels sprouts to pan (don't drain oil as it will be easily and quickly absorbed by the very dry sprouts.)
  5. (optional: this is a good time to add the red pepper.)
  6. Add salt and pepper and cover with a heavy lid just smaller than your pan. The pressure will help carmelize the sprouts.
  7. Cook for about 15 minutes, stirring occasionally.
  8. Add garlic and lemon juice after about 10 minutes. Salt and pepper to taste.
  9. Serve and enjoy.
