Herb-Crusted Salmon

- extra virgin olive oil shopping list
- 2 salmon filets, 4 ounces each shopping list
- 1/4 cup plain dry bread crumbs shopping list
- 1 tbsp salted butter, melted shopping list
- 1/2 cup fresh basil, chopped shopping list
- 1 clove garlic, chopped shopping list
- 1/2 tsp dried rosemary shopping list
- 1/2 tsp dried oregano shopping list
- 1/2 tsp kosher salt shopping list
- fresh ground black pepper shopping list
How to make it
- Preheat oven to 400 degrees.
- Prepare on a baking sheet 2 foil sheets large enough to cover each salmon completely.
- Spray both sheets of foil with cooking spray and sprinkle lightly with kosher salt before placing each salmon filet on the foil.
- In a small bowl combine breadcrumbs, basil, garlic, rosemary, oregano, salt, and pepper.
- Coat both salmon filets with melted butter.
- Top each filet with dry mixture and drizzle olive oil over the top.
- Wrap the salmon filets by pulling the longer sides of the foil and joining them so they stay together.
- Fold the ends upward to prevent leakage once cooked. Bake for 35 minutes.
