How to make it

  • Preheat oven to 400 degrees.
  • Prepare on a baking sheet 2 foil sheets large enough to cover each salmon completely.
  • Spray both sheets of foil with cooking spray and sprinkle lightly with kosher salt before placing each salmon filet on the foil.
  • In a small bowl combine breadcrumbs, basil, garlic, rosemary, oregano, salt, and pepper.
  • Coat both salmon filets with melted butter.
  • Top each filet with dry mixture and drizzle olive oil over the top.
  • Wrap the salmon filets by pulling the longer sides of the foil and joining them so they stay together.
  • Fold the ends upward to prevent leakage once cooked. Bake for 35 minutes.
