Curried Coconut Carrot Soup

- 1 lb carrots, chopped shopping list
- 1 yellow onion, chopped shopping list
- 2-3 cloves garlic, minced shopping list
- 1 1/2 tbsp minced ginger shopping list
- 2 tbsp Madras curry powder(more or less to taste, depending on how spicy you want it.) shopping list
- 1 14 oz can of coconut milk. shopping list
- salt to taste shopping list
- 1 tbsp cooking oil, whatever you prefer. shopping list
How to make it
- Chop carrots, onion, garlic and ginger.
- Add oil to pan, then add vegetables.
- Saute, covered, stirring occasionally for about 10 minutes.
- Add curry powder, and continue to saute for another 5-10 minutes, until carrots are soft.
- Add coconut milk and salt and heat through.
- Use immersion blender, or transfer to blender and puree.
- Add salt to taste.
- Garnish with Green Onions or Cilantro.
