How to make it

  • Chop carrots, onion, garlic and ginger.
  • Add oil to pan, then add vegetables.
  • Saute, covered, stirring occasionally for about 10 minutes.
  • Add curry powder, and continue to saute for another 5-10 minutes, until carrots are soft.
  • Add coconut milk and salt and heat through.
  • Use immersion blender, or transfer to blender and puree.
  • Add salt to taste.
  • Garnish with Green Onions or Cilantro.
