How to make it

  • Cook pasta according to package directions
  • In large pot, saute veggies in olive oil, with dash of salt and pepper, basil and parsley until tender
  • Add can of tomatoes, combine
  • Add broth and bring to a boil
  • Reduce and simmer 5-10 minutes.
  • Add pasta to soup
  • (You can also add leftover chicken or turkey, as well, for a heartier meal)
  • Serve in bowls, topped with parmesan cheese and a slice of crusty bread on the side!
