Peach Soup

- 2 1/4 c. of fresh peaches - peeled, pitted and chopped shopping list
- 1/2 c. of diced onion shopping list
- 4 cloves of garlic shopping list
- 1 tbsp. of olive oil shopping list
- 1 tbsp. of curry powder shopping list
- 1/8 tsp. of ground turmeric shopping list
- 1/4 c .of packed brown sugar shopping list
- 1/4 c. of Chardonnay wine shopping list
- 1 c. of vegetable broth or stock shopping list
- 1/2 c. of coconut milk shopping list
- salt and ground black pepper to taste shopping list
How to make it
- First preheat your oven to 275 degrees.
- Now you want to roast garlic clove on baking sheet approx. 30 min.
- Don't burn garlic!
- Now you can add some olive oil to a oan over medium flame.
- Sweat onions and the peaches until soft.(put aluminum foil over sauteing onions.) approx. 30 min.
- Now season with curry powder, turmeric, the roasted garlic, and then the sugar.
- Let this cook over low flame around 30 min(until carmelized)
- Then add Wne, stirring in the stock.
- Now you can remove from heat.
- You want to puree the soup until creamy.
- Next you want to strain over sieve.
- Finally you want to add in coconut milk, seasoning with salt and pepper.
- Ladle and serve!
