Ingredients
  • 2 1/4 c. of fresh peaches - peeled, pitted and chopped
  • 1/2 c. of diced onion
  • 4 cloves of garlic
  • 1 tbsp. of olive oil
  • 1 tbsp. of curry powder
  • 1/8 tsp. of ground turmeric
  • 1/4 c .of packed brown sugar
  • 1/4 c. of Chardonnay wine
  • 1 c. of vegetable broth or stock
  • 1/2 c. of coconut milk
  • salt and ground black pepper to taste

Directions
  1. First preheat your oven to 275 degrees.
  2. Now you want to roast garlic clove on baking sheet approx. 30 min.
  3. Don't burn garlic!
  4. Now you can add some olive oil to a oan over medium flame.
  5. Sweat onions and the peaches until soft.(put aluminum foil over sauteing onions.) approx. 30 min.
  6. Now season with curry powder, turmeric, the roasted garlic, and then the sugar.
  7. Let this cook over low flame around 30 min(until carmelized)
  8. Then add Wne, stirring in the stock.
  9. Now you can remove from heat.
  10. You want to puree the soup until creamy.
  11. Next you want to strain over sieve.
  12. Finally you want to add in coconut milk, seasoning with salt and pepper.
  13. Ladle and serve!
