Prawn Curry Noodles

- 1 pack of egg/yellow noodles shopping list
- 1/2 kg sweet potato shopping list
- 1 kg prawns (cleaned) shopping list
- 5 shallots shopping list
- 5 cloves garlic shopping list
- 1 inch ginger shopping list
- 1 Cup dried shrimp shopping list
- 5 tbsp meat curry powder shopping list
- 150 g balls / squid / prawns/chicken etc. (as u wish) shopping list
- 1 pack fried tofu shopping list
- Boiled eggs shopping list
- water shopping list
- oil shopping list
- salt shopping list
- Garnishing: shopping list
- scallion and parsley shopping list
- Fried onion shopping list
- Blanching mustard leaves shopping list
- lime shopping list
- Boiled eggs shopping list
How to make it
- Peel sweet potato and cut into small pieces. Soak for 5 mins and blend with a cup of water.
- Add blended sweet potato in the pot with enough water to make the sauce, cook until its boiled and reduced.
- Meanwhile, dry blend onion, garlic, ginger and dried shrimp.
- Heat oil, and saute blended onion, garlic, ginger and dried shrimp until fragrant and yellowish.
- Make a paste with curry powder and a little water. Add in the sauted mix and stir until it becomes light, bubbly and brown.
- Add the sauted mix into the sweet poatato pot, stir and leave it to boil and thicken. Dont forget to add some salt.
- When its boiled, add balls, prawns and fried tofu. Leave it to boil again.
- When cooked, put some noodles in a bowl, add garnish and boiled egg then pour curry soup over the top. E
