How to make it

  • Peel and dice the Sweet Potatoes/Kumara into bite sized chunks
  • Boil in salted pot for around 15 minutes or until a knife slides easily through the chunks
  • While it's cooking mix together the Potato Salad and Curry Powder and add salt and pepper
  • Peel and cut up the Oranges into chunks of the same size
  • Drain the Kumara and leave to cool - If you are in a hurry put into the fridge to cool down
  • Once cold add the Orange pieces, Spring Onions and the Potato Salad/Curry Powder mixture
  • Stir through and serve in a large serving dish
