Carne Adobado Spiced Pork

- 2 cups red chile purée or shopping list
- 12 tablespoons chile powder shopping list
- 3 pounds fresh, lean pork shopping list
- 2 teaspoons salt shopping list
- 1 tablespoon oregano shopping list
- 2 cloves garlic, mashed shopping list
- Cut pork into strips. Mix other ingredients, add to pork strips, and let stand in refrigerator for 24 hours. shopping list
- Cut meat into cubes and brown in small amounts of oil. Add chile sauce and simmer one hour or more. shopping list
- To serve, add more fresh chile sauce and cook until tender. shopping list
- New Mexico Style Fresh Red Chile Sauce shopping list
- 14 to 24 fresh red chiles or 1 cup of frozen chiles shopping list
- 1 teaspoon salt shopping list
- 1 teaspoon oregano shopping list
- 1/2 cup water shopping list
- 1 clove garlic shopping list
- 1 small onion, sliced shopping list
- 1 tablespoon butter or margarine shopping list
- Remove stems, seeds, and veins of fresh red chile. Cover with boiling water and let stand 10 minutes. Remove chile and place with salt, garlic, onion, and oregano in blender. Add water, according to blender requirements, and blend until all ingredients are reduced to a smooth paste. shopping list
- Place sauce in heavy pan. Add 1/2 cup water (or more, depending upon the amount used in blending). Add butter or margarine. Simmer about 1/2 hour or until mixture has the desired consistency. Stir occasionally to keep from burning. Yield: 1 to 1 1/2 cups. shopping list
