Easy Bean Stew

- 1 lb. crimini mushrooms, halved shopping list
- 2 small carrots, sliced shopping list
- 2 14.5 oz. cans black beans, undrained shopping list
- 2 14.5 oz. cans pinto beans, undrained shopping list
- 1 14.5 oz. can diced tomatoes with peppers shopping list
- .25 tsp. cayenne pepper (or to taste) shopping list
- 1.5 tsp. salt shopping list
- 6 cups cooked rice shopping list
- cheddar cheese, shredded (optional) shopping list
How to make it
- Mix all ingredients in a 4 quart slow cooker
- Cook on high for 6 hours
- Serve over hot, cooked rice topped with cheese
