How to make it

  • cook pasta per directions on package, rinse and dry, set aside
  • defrost spinach in a colander under cool water, drain and dry. set aside
  • in a LARGE skillet, heat oil and sauté mushrooms, tomatoes, olives and garlic until mushrooms are soft (about 5-7 mins)
  • stir in spinach and heat another 5 mins
  • in another skillet, toss pasta with a splash of olive oil and italian seasoning for the same 5 mins over low heat
  • add pasta and tomato sauce to the rest and toss together with a bit of lemon pepper
  • serve hot as a main course
