Buttermilk Prune Pie

- pie filling shopping list
- 1 cup sugar shopping list
- 1/4 cup cornstarch shopping list
- 1/2 teaspoon nutmeg shopping list
- 1/4 teaspoon salt shopping list
- 2 1/2 cups buttermilk shopping list
- 2 eggs, separated shopping list
- 1/2 cup chopped prunes shopping list
- 1 9inch baked pie shell shopping list
- Meringue topping (optional) shopping list
- 2 egg whites (left from filling) shopping list
- 1/4 cup sugar shopping list
How to make it
- Combine sugar, cornstarch, nutmeg and salt in a saucepan.
- Gradually stir in buttermilk and beaten egg yolks. Add prunes and cook, stirring constantly until mixture thickens.
- Boil one minute.
- Pour into pie shell and chill.
- Serve with whipped cream or meringue.
- For meringue topping beat together egg whites and sugar until fluffy.
