How to make it

  • 1.In a skillet heat ghee on a low flame.Be sure to keep the flame low as ghee heats very quickly.
  • 2.Add the semolina,and saute it till it swells & puffs up and lends off an aroma.this should take abt 3-4 mins.it is important to keep stirring it.
  • 3.Add hot milk,stirring continuously on a low flame so that lumps dont form.Cover & cook for a minute or two.
  • 4.Once the mix has thickened and all the milk absorbed,add the sugar and keep stirring till it has dissolved(check the sweetnes.if u feel it could hold some more sugar,add it at this point)
  • 5.Sprinkle cardamom powder and mix well
  • 6.Finally garnish with roasted cashews and raisins and serve hot by itself or with hot pooris.

    One can also make this dish interesting by adding 1/4 cup of mashed ripe bananas to it,gives a lovely flavor to it.add it just after the semolina has swelled and saute it nicely for 2-3 mins before adding milk.
