home made mayonnaise

- 2 egg yolks shopping list
- 5 ml dijon mustard= 1 teaspoon shopping list
- 300 mml olive oil= 1/2 pt shopping list
- juice of 1 lemon shopping list
- salt and pepper shopping list
How to make it
- place egg yolks in bowl. add mustard and mix well, season with salt and pepper
- add oil drop by drop,mixing constantly with whisk. when mayonnaise begin to thicken, add oil in steady stream, whisking constantly
- add lemon juice only after mayonnaise is very thick
- NOTE: to keep mayonnaise for 2 days in refrigerator, add 15 ml (1 tablespoon) hot wawter. whisk well
