How to make it

  • Gently fry bacon
  • Gently fry mushrooms and place both to one side
  • Roll out sausagemeat and place in a layer on the bottom of the lasagne dish
  • Slice tomatoes (or apricots if preferred) and place a layer on top of sausage meat
  • Spoon fried bacon and mushrooms on top of tomato/fruit
  • Place sliced white bread over the top for the final layer. I tend to break it up a little and place it like a jigsaw as the edges become crispier by doing this
  • Beat four eggs (or one per person), add a little milk and pout over the bread - alternatively dip the slices of bread in the egg mixture and then pour the rest of the mixture over the dish.
  • Place dish in a warmed oven (200 degrees in Uk - think that's 400 degrees US style)
  • Leave for between 30 - 45 minutes until the egg has set
  • Serve hot
