Pita Pizzas Recipe
After suffering through many lunch time or late night pizza cravings than my weight watchering would allow, I put this together to give me the pizza fix that I needed. Super quick and easy.

Ingredients
  • 1 pocket pita, halved into two rounds
  • 2 T classical white pizza sauce (or olive oil and a few shakes of dried Italian Seasoning)
  • sliced green or red pepper, red onion, mushrooms, or other veggies
  • 1/4 c. crumbled reduced fat feta cheese

Directions
  1. Preheat oven to 425
  2. While oven is preheating, slice the pita and veggies. I usually use green pepper and red onion because it's handy, but I have substituted plum tomatoes and fresh basil for a delicious mini-margherita pizza.
  3. Coat each pita round with 1 T of white pizza sauce or olive oil. Sprinkle with Italian Seasoning or crushed garlic if you like.
  4. Spread veggies evenly over each round.
  5. Crumble feta on top
  6. Bake about 10 minutes until pitas are crisp.
