Leek and Mushroom pancakes

- 1 leek-sliced shopping list
- 2 large flat field mushrooms- chopped shopping list
- olive oil for frying shopping list
- 1/2-1 teaspoon wholegrain mustard shopping list
- 1 dessertspoon butter shopping list
- 1 dessert spoon plain flour shopping list
- Cup of milk shopping list
- Mixed peppercorns shopping list
- parmesan cheese shopping list
- Pancake batter shopping list
How to make it
- Prepare the pancake batter and put aside
- In a saucepan fry the leek until soft then add mushroom and fry till cooked
- Add the butter and when it's all melted add the flour and cook for a couple of minutes stirring continuously. (add more flour if the mix looks too 'soggy')
- Take off the heat and add half of the milk a little at a time. Add the mustard and return to the heat.
- Bring to the boil stirring continuously and add more milk as required to get the right consistency.
- Grind plenty of peepercorns into the mix and leave on a low heat
- Make a plate sized pancake
- Put it on a plate. Spoon the filling on to one half, sprinkle parmesan on top and fold the pancake over.
