How to make it

  • Prepare the pancake batter and put aside
  • In a saucepan fry the leek until soft then add mushroom and fry till cooked
  • Add the butter and when it's all melted add the flour and cook for a couple of minutes stirring continuously. (add more flour if the mix looks too 'soggy')
  • Take off the heat and add half of the milk a little at a time. Add the mustard and return to the heat.
  • Bring to the boil stirring continuously and add more milk as required to get the right consistency.
  • Grind plenty of peepercorns into the mix and leave on a low heat
  • Make a plate sized pancake
  • Put it on a plate. Spoon the filling on to one half, sprinkle parmesan on top and fold the pancake over.
