How to make it

  • Cook rice according to package directions; set aside to cool.
  • Melt butter in skillet over medium heat. Add chopped onions, and cook until softened.
  • Combine rice and onions with all other ingredients in a large mixing bowl.
  • Shape mixture into size of your choice. I use a small ice cream scoop, and it makes about 1½-inch meatballs.
  • Either fry these in the skillet that the onions were cooked in, or place meatballs on a jelly roll pan and bake in a 350F deg oven for about 30 minutes.
  • Serve or freeze, as desired.
  • PARMESAN MEATBALLS: Mix in 1 cup of grated Parmesan cheese before shaping the meatballs.
