Lisas Chicken And Bean Empanadas

- 1 chicken breast, cooked and shredded shopping list
- 1 cup blended or squashed brown beans (or 1 can of refried beans) shopping list
- 1/2 package taco seasoning (or use your own seasoning: garlic powder, cumin, salt, and black pepper are good) shopping list
- 20 empanada shells (small, round shells used to make Chinese dumplings; find dough recipe online or look in your local food store for flour pastry shells) shopping list
- 1 1/2 to 2 cups oil shopping list
- small bowl of water shopping list
How to make it
- Put cooked chicken and blended beans in skillet with a small amount of oil; cook until heated through; add seasoning
- Put about 1/2 tablespoon of chicken/bean mixture onto each shell
- Moisten the inside edges of the shell using a finger dipped in the bowl of water; cover with another shell; pinch together using a fork or fingers
- Fry each empanada in the oil over medium heat until both sides are browned
