Ingredients
  • 1 lb. bag frozen
  • pitted cherries
  • 2 c. of pinot noir
  • 1 tsp. of lemon zest chopped
  • 1/4 c. of sugar
  • 1/4 c. of honey Cinnamon stick
  • 1/2 c. of water
  • Dash salt and black pepper
  • 2 tbsp. of cornstarch
  • 1/4 c. of water
  • Lemon or cherry sorbet (optional)

Directions
  1. First you wan to take a pan over medium flame and cherries, wine, zest, sugar, honey, cinnamon stick, 1/2 cup water, salt and pepper.
  2. Then you can stir this for about 1-2 min.
  3. Now you wan to let his boil, before reducing flame to low to reduce your liquid(15 min)
  4. Then you will take a small small bowl, whisk together your cornstarch and 1/4 cup water.
  5. Then you can whisk the cornstarch mixture into the cherry mixture and then let this come to a boil.
  6. Its important to reduce heat and keep flame over low at least 10 minutes or until slightly thickened.
  7. Then take the soup off the flame.
  8. Take the cinnamon out of the soup and place in bowl
  9. Puree soup in a blender, one cup at a time until smooth.
  10. Now you want to strain the soup with a strainer. Put soup in bowl with cinnamon stick.
  11. Let this chill completely.
  12. Remove and discard the cinnamon stick.
  13. Serve with sorbet!
