How to make it

  • Quarter half the tomatoes and puree with the Chilli, Garlic and Ginger
  • Seed and dice the remaining Tomatoes
  • Place puree, Fish Sauce, Sugar and Vinegar in a deep pot and bring to a boil slowly
  • When it reaches a boil lower heat to simmer and add Diced Tomatoes
  • Simmer for 30 to 40 minutes or until dark brown and jam-like
  • Cool and refrigerate
