Tomato Chilli Jam

- 1 lbs Fresh plum tomatoes shopping list
- 1Red Chilli shopping list
- 1 tsp garlic peeled, halved shopping list
- 2 tbsp Fresh ginger chopped shopping list
- 2 tbsp fish sauce shopping list
- 1 cup brown sugar, packed shopping list
- ¾ cup red wine vinegar shopping list
How to make it
- Quarter half the tomatoes and puree with the Chilli, Garlic and Ginger
- Seed and dice the remaining Tomatoes
- Place puree, Fish Sauce, Sugar and Vinegar in a deep pot and bring to a boil slowly
- When it reaches a boil lower heat to simmer and add Diced Tomatoes
- Simmer for 30 to 40 minutes or until dark brown and jam-like
- Cool and refrigerate
