Maple Glazed Stuffed Pork

- 2 lb. pork loin, butterflied shopping list
- 2 tblsp.butter shopping list
- 1/4 c. maple syrup(the real thing) shopping list
- 2 tblsp. spicy brown mustard shopping list
- 1 tsp.fresh rosemary, chopped shopping list
- 1 apple, chopped shopping list
- 6 oz.dry stuffing mix(pepperidge farm, stovetop, homemade etc..) shopping list
- 1 1/2 c. hot water shopping list
- 5-6 apples,peeled, cored, sliced into wedges, keep aside for roasting with porkloin shopping list
How to make it
- preheat oven to 350
- melt butter in a large skillet over medium heat, add the chopped apple, cook and stir about 5 min, until the apples are crisp/tender
- add water and stuffing mix, cover and let stand 5 min., toss lightly
- spoon the stuffing mixture onto the cut side of the loin within 1/2 of all the edges
- roll up like a jellyroll, starting at one of the short ends
- place seam side down in a lightly greased roasting pan
- bake for 45 minutes
- mix syrup, mustard, rosemary, spread over meat
- arrange apple wedges around the roast
- return to oven bake for 35 minutes more
- remove from oven, let rest 15 minutes before slicing to serve.
