How to make it

  • Rinse rice
  • Combine rice and water in a medium saucepan. Cook as directed
  • While rice is cooking, pulverize peanuts, if using, if using
  • Melt butter in a large skillet over medium-high heat.
  • Saute onion until transparent.
  • Stir in ginger, cilantro and carrots.
  • Salt to taste.
  • Reduce heat to low and cover to steam 5 minutes.
  • Stir in cayenne pepper,peanuts and pineapple if using.
  • When rice is done add to skillet and stir gently to combine with other ingredients.
