Carrot Rice

- 1 C. jasmine rice ( can substitue basmati rice) shopping list
- 1 1/2 C. chicken broth shopping list
- 1/4 roasted peanuts ( optional) shopping list
- 1 TBSP butter shopping list
- 1 sm. onion sliced shopping list
- 1 TBSP grated ginger root shopping list
- 3/4 C. grated carrots shopping list
- 1/4 cilantro shopping list
- salt to taste shopping list
- cayenne pepper to taste shopping list
- pineapple (optional) shopping list
How to make it
- Rinse rice
- Combine rice and water in a medium saucepan. Cook as directed
- While rice is cooking, pulverize peanuts, if using, if using
- Melt butter in a large skillet over medium-high heat.
- Saute onion until transparent.
- Stir in ginger, cilantro and carrots.
- Salt to taste.
- Reduce heat to low and cover to steam 5 minutes.
- Stir in cayenne pepper,peanuts and pineapple if using.
- When rice is done add to skillet and stir gently to combine with other ingredients.
